Add chickpeas, parsley, shallot, garlic, sesame seeds, cumin, salt, pepper (and coriander and cardamom if using) to a food processor or blender and mix/pulse to combine, scraping down sides as needed until thoroughly combined. My scoop came with a flat spoon that i use for scraping and pressing. Add 2 teaspoons of the oil to a frying pan over a low heat. Pulse for a minute or so and you are ready to make falafel!
And yes, you can freeze falafel! Do not add too many at one time.
