In a shallow dish, combine the two types of sesame seeds and stir to mix.

Place steaks in the pan, and sear for about 30 seconds on each side. 10 minute sesame crusted tuna. Carefully (so that the sesame seeds don’t fall off) put the tuna steaks in a clean hinged grid, then braai them over very hot coals for about 1 minute each on both sides.

Heat olive oil in a cast iron skillet over high heat until very hot. Add the black sesame seeds to the plate if using, and stir seeds around with fingertips to combine. Spread the sesame seeds out on a plate, then press the tuna into the sesame seeds to coat.

In a shallow dish, combine the black and white sesame seeds and stir to mix. In a small bowl mix together: Spread the sesame seeds out on a plate.

If using a dipping sauce go light on the salt. In a searing pan over high heat, warm the oil until smoking. Season the tuna with salt and pepper and dredge in the sesame seeds, coating the tuna evenly.

In a non stick pan, warm the oil until smoking, arrange the tuna in the pan (making sure not to overcrowd) and cook until the white sesame seeds start to turn golden underneath (around 1 minute). Spread the sesame seeds out on a plate. Add the sesame oil to the pan and let it get hot, but not smoking.;

Season tuna lightly with salt and pepper and coat top and bottom of fish completely in sesame seeds, pressing to adhere. Put the sesame seeds in another dish or on a plate and then dip the steaks on all sides into the sesame seeds to coat them evenly. Encrusting the tuna with sesame seeds provides an asian flair, protecting the meat during the sear and adding a nutty flavor as the seeds toast.

Combine the white and black sesame seeds on a plate and spread in a thin layer. Place the sesame seeds on a large plate and gently press both sides of tuna steak in sesame seeds to coat. Remove the tuna steaks from the marinade, brushing the scallions off the steaks;

To make the sesame crusted seared tuna steaks: Place the sesame seeds on a plate or a shallow dish. Place steaks in the pan, and sear for about 30 seconds on each side.

Refrigerate for at least 1 hour. Place the tuna steaks in the pan side by side. Add cilantro, soy sauce, water, brown sugar and sesame oil into the bowl and mix well.

Rub the miso all over the tuna, then pat on the sesame seeds to cover. Using a spoon, drizzle a little of the mixture over each tuna steak and rub with the back of a spoon to cover the entire surface. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, ginger, garlic, brown sugar, lime juice, and green onions.

Pour half of the mixture over the tuna and cover with a lid. This technique also works well with other fish that have little fat and no skin, such as swordfish and mahi mahi. Place the sesame seeds in bowl or plate, and coat both sides of each tuna steak by pressing each one into the seeds.;

Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce. Once hot, add your ahi tuna in and sear on all sides about 20 seconds on each side for a light sear (depending on thickness of ahi tuna).

Season coated tuna with sea salt and cracked pepper. Add mixture to tuna and marinate for 30 minutes. Season all sides of the tuna steaks with a few pinches of salt each and one twist of fresh cracked black pepper on each side.

Place both tuna steaks in the pan, and let sit for about 2 minutes, or until the side facing down is cooked to your liking. Quickly roll in sesame seeds and cut into thick slices. Slice tuna into 1 pieces and place in a large ziploc bag.

Brush both sides of each tuna steak with 1/2 teaspoon (each) vegetable oil. Remove from heat and spread seeds on a plate. Brush the tuna steaks with olive oil and then dip into the sesame seeds, lightly coating each side.

Combine the white and black sesame seeds in a small bowl and set aside. Whisk the sesame oil and soy sauce together in a small bowl. Remove to a board to rest.
